Iron Love with Garic Safron Artichoke Rice



Happy New Year- Almost-
So excited for this New Year and all the possibilities that await it.
This is today's lunch.










Iron Love-
Saute Garic in oil.
Add cubbed tofu- brown
add cardimum, and salt and pepper-
1 bag frozen chopped spinich.
1 can coconut milk
1can red Kidney beans (rinse)
dash of siracha chile
juice of 1 lime
simmer and wait for it to thicken.

Garlic safron Artichoke Rice-
Saute 5 garlic cloves diced fine in oil.
Add basmati rice and stir on high heat til' rice turns color-
add 1 box- frozen (Thawed) artichoke hearts chopped- up
salt and pepper
dash of cayenne
tumeric- 1/2 tsp.
pinch of safron sprigs.
cover rice with water/ just slightly above
bring to a boil/cover and simmer and low heat for 20 min.
I add a little olive oi right before I put the lid on to simmer.

Mama Auj's Vegan Chowder /Full of Love



This recipe was shared by my dear Sister, Mama Auj- I can't wait to try it.
She is a natural Mama, who home birthed her son and is feeding her family "Ital food". She knows that "Ital is Vital".!

ingredients:

2 tablespoons olive oil
1 small onion, chopped
1 cup celery, chopped
1 cup carrots, chopped
1 clove garlic, minced
2 1/2 cups water
2 cubes of veggie bouillon
2 cups corn (i used 2 cups of organic frozen mixed veggies from costco)
3 small yukon gold potatoes (cubed)
2 cups organic soy milk
1 tablespoon flour
1 teaspoon dried parsley
1 teaspoon garlic powder
1 teaspoon salt (prolly best to add salt to taste as most veggie bouillon cubes have salt added to them already-don't want it too salty)
1 teaspoon pepper

heat oil in large skillet over medium heat. add onions and celery; cook until slightly golden. add carrots and garlic and cook till garlic is slightly golden. add the frozen veggies and potatoes during this time as well.

meanwhile, bring water to a boil in small pot. add bouillon cubes and reduce heat to medium. when cubes dissolve in water, add to skillet. cook until veggies are tender. reduce heat to low, and pour in 1 cup soy milk. stir soup well, then stir in remaining 1 cup soy milk. quickly whisk in flour. stir in parsley, garlic powder, salt and pepper. cook, stirring constantly until chowder thickens, about 15-20 min.

there you have it...super easy vegan chowda! most people have these ingredients already at home so pretty cheap and easy to make :) full-joy ♥

Looking Forward

Blessings and Love dear family,

I must say that 2010 was full of some great challenges. But with Jah by my side, these challenges have made me stronger. I am thankful for what I have learned. I am never too old to grow, and I always pray that I will be guided to where Jah wants me to be, surrounded by love. I am also so blessed to have a wonderful support system. My husband is my best friend, and, besides Jah, my great ROCK of comfort....for almost 7 years strong- we love each other more today than yesterday.

I look forward to the new year as we approach it's arrival- full speed ahead. I have been truly blessed by Jah with a wonderful new opportunity to combine all my passions into one venture. This new positions begins with this new year- and I am so excited. I will be cooking, un-cooking, sharing, and teaching all about a vegetarian life-style. I will be holding cooking classes and speaking to children and their parents, and grandparents. I pray with all my heart that I can inspire others to choose healing foods- foods that will open lives to a new destiny. Knowledge is power. I love you with the love of the Most High Jah. I pray for goodness and that you all enter into this new year knowing how loved you are by the one that created you. Let us love one another and join in praise- For this is the day that Jah has made. Aloha
